Chinois Vinaigrette


Makes about 3/4 cup


1/4 cup plus 2 tablespoons rice wine vinegar

1/4 cup peanut oil

1/4 cup soy sauce

2 tablespoons sesame oil

Juice of 1 medium lemon


Freshly ground pepper

[I add about four heaping Tablespoons of finely chopped sushi style pink ginger

and one Tablespoon of dried wasabe ko, sushi style green horseradish]


Small bowl


At Chinois, we combine rice wine vinegar, peanut oil, soy sauce, and sesame oil

to give the vinaigrette a distinctive oriental flavor.

1 In a small bowl whisk together all the ingredients, seasoning with salt and

pepper to taste. Use as needed.


To prepare ahead: Through step 1, refrigerating, covered, until needed.
